Pallini
Pallini uses only lemons of a special variety grown on the Amalfi Coast. The name is Sfusato Amalfitano, and it is characterized, among other things, by being less acidic and more sweet and aromatic than most other lemons. They are harvested by hand when they are perfectly ripe and immediately transported to the distillery, where the peel is carefully peeled off so that none of the bitter mesocarp gets in. As quickly as possible, the peel is infused in neutral spirit made from sugar beet. After the infusion, the limoncello is flavored with sugar to give it the perfect balance between acidity and sweetness.
