Here they make Côte aux Enfants, where their passion for making fantastic wines really comes to the fore. These red wines have also helped make Bollinger Rosé absolutely fantastic when they started production in Verzenay. As Bollinger himself writes: Because only great wines make great champagnes.
Notes
It has an intense depth and contrast, with some nice aromatic notes of red currants, cherries and fresh strawberries.
Grape varieties
62% Pinot Noir, 24% Chardonnay. 14% Pinot Meunier. Over 85% of premier and grand crus wines for this champagne.
Dosage: 7-8g/L
Food Pairing: Grilled tomatoes and salmon with basil pesto. To this, pasta with broccoli, grilled artichoke and basil pesto.
