Friis-Holm calls La Dalia chocolates 'The Lazy Cocoa Growers Blend' because it is a blend of different types of cocoa beans. When Friis-Holm asked the farmers to sort the beans into the different varieties, they said no! As a friendly joke, Friis-Holm thought it was a bit lazy! But luckily this blend produces an absolutely fantastic chocolate of many different kinds.
La Dalia 85% is in the same series as La Dalia 60%, La Dalia 70% and La Dalia 100%.
La Dalia 85% is a very acidic chocolate with a mineral character. The berry notes that are in 60% and 70% La Dalia disappear, but in comes another type of intense acidity that breaks the intensity of the cocoa. And that is exactly what you want in a high chocolate percentage, because if you don't have it, it can be very intense. The acidity will somehow lift and lighten the chocolate.
