This prestige cuvée by Ruinart, Dom Ruinart Blanc de Blancs, is a pure Chardonnay blend exclusively from the Grand Cru. The grapes come predominantly from the Côte des Blancs, which makes this cuvée firm and full-bodied, rewarding patience if stored for years to come.

Dom Ruinart 2010 marks a major step in the winemaking process with the return of a once common practice: corks for aging on the yeast residues. This process has been used by Ruinart's cellar master since the 1998 vintage. After tasting the first attempt ten years later, the difference was significant: the corked bottles revealed tighter wine with an extra layer of complexity. Although cork is porous, it remains extremely stable over a long period of time, while metal caps allow small amounts of oxygen to constantly enter the bottle. After a manual disgorging, necessary for champagne aged under cork, a small dosage is added to make it round. With only 4 grams of sugar per liter, Dom Ruinart Blanc de Blancs 2010 is Extra Brut.

The weather: The 2010 harvest was characterized by a very cold winter with severe frost spots. The weather improved in the spring and early summer months with cool and steady temperatures. During August and September, storms and damp conditions complicated the ripening process, and much of the thin-skinned Pinot Noir largely succumbed to rot. Dom Perignon's vineyards in the Grand Cru village of Verzenay produced some excellent Pinot Noir, but there were not many examples of great PN from 2010. In contrast, the Chardonnay was of super high quality, one of the best Chardonnay years in the last ten years.

Tasting note: Really deep taste. Much more depth of flavor and tension than the 2009 Dom Ruinart. Cork aging seems to enhance the savory, reduced character reminiscent of white Bordeaux. "Overall 2010 was not a great year in Champagne, but it was for some Chardonnays, as this brilliant Dom Ruinart showcases. For this Dom Ruinart vintage, the specialty is closing with natural cork for lees ageing. This is the first time for Dom Ruinart in the recent era and based on the superb results, the way it will continue. It has resulted in fabulous ageing, with stunning reductive toasty layers. The sweet coffee-and-cream nose has yeasty complexities melange with soft, spicy tones like coconut and vanilla. The fruitiness is as pristine as it gets. Lemon curd, lime zest, orange blossom... Beautifully reductive in the aroma profile, almost like having the magnum effect in a 75cl bottle! So fine and delicious on the silky-smooth and seemingly feather-light palate. This wine shows that Chardonnay really had what it takes in that difficult year. Ruinart recommends storing the bottles in the dark at a temperature between 7-18 degrees with a humidity above 70%. Should be stored for 7-10 years

Ruinart recommends serving Champagne in a tulip glass or white wine glass with a large open width, so that the aroma can develop.

Dom Ruinart has a cork stopper instead of a metal capsule during the second fermentation, which gives a greater taste and a new dimension to the champagne.
