Billecart-Salmon Brut Nature NV 75 cl.

With this Champagne, Billecart-Salmon has made a so-called "Brut Nature" Champagne. This means that the Champagne has not had dosage (sugar liqueur) added after the second fermentation in the bottle, as has traditionally been the custom in Champagne. However, more people choose to add less sugar, simply because they have become more skilled at growing healthier grapes. However, only the most skilled producers manage to create good Champagne without adding sugar at all, and Billecart-Salmon is of course one of them.

This Brut Nature is a blend of 40% Pinot Meunier, with Pinot Noir and Chardonnay making up the rest of the blend. The grapes come from some of the best plots in the region, and after fermentation in steel tanks, the wine has spent a full 48 months in the bottle during the secondary fermentation, far exceeding the minimum requirement of just 15 months.

This results in a beautiful, fresh and dry Champagne that, thanks to the long aging in the bottle, appears impressively rounded with lots of fullness and intensity in the fruit.
