There is rosé champagne. There is good rosé champagne. And then there is Cuveé Elisabeth Salmon Rosé from Billecart Salmon.
The grapes for this absolute top champagne come exclusively from Grand Cru and Premier Cru vineyards in Champagne. 55% is Chardonnay from Chouilly, Avize, Mesnil-sur-Oger and Cramant, while the remaining 45% of the blend is Pinot Noir from Mareuil-sur-Aÿ, Aÿ and Ambonnay.
Less than 10% of the Pinot Noir is vinified as red wine from old vines in Mareuil-sur-Aÿ with a southern exposure. A small proportion of the wine is barrel-aged, and finally the final wine is aged for a staggering 115 months on the lees in the Billecart-Salmon cellar.
The final result is some of the greatest rosé champagne you can possibly find, and only a modest 3.8 grams of dosage per liter has been added.
This exclusive top cuvée was first produced in 1988 as a tribute to one of the house's founders, Elisabeth Salmon.
It appears beautifully with salmon-colored tones and with a pearly sheen and a light and fine mousse. Fresh red berries, roses and citrus peel tease the nose, and nuances of fresh figs, white peaches and crispy macaroons unfold in the aroma. The taste has clean and clear notes of mandarin, nectarine and cardamom with an exotic touch of cedar. An elegant and aromatic wine that will dress dishes with lobster or poultry in creamy sauce. Also suitable for not too sweet desserts with fresh fruit.
